Well today Mathew it's steak and Gunnies pie, well actually tonight it will be Gunnies stew and tomorrow it will be turned in to two big pies, ingredients were doubled up, Annie's decided to have a girly (mates, sister and daughters) dinner tomorrow while I'm out at football, she wanted something simple that she could prepare in advance so opted for steak pie, made filling today and will turn in to pie tomorrow...

And Annie made it..................... Culinary delight thread... - Page 10 2419626307Culinary delight thread... - Page 10 Image37

Saturday, I have been baking, cheese scones, fruit scones, flapjacks and we had a taste by having a pick at teatime so wanted something light, just made a small mac & cheese, lots of strong cheese, good dollop of mustard and a crunchy Parmesan topping. Going to munch now while watching Strictly.

Well just demolished a plate of Guinness stew with a bit broccoli and potato on the side, 10/10, Annie can cook again, will be even better tomorrow when it's turned in to a pie and had time to marinate plus cheese added,,, we have small individual pie dishes so I'm getting my own one made for when I get home from football...

Well,,, I would recommend above recipe, as said Annie made it, I thought a bit short on seasoning, salt, pepper and rosemary and she used dried rosemary, only other deviation from recipe was to use bisto gravey granuals rather than flour to thicken, also probably a bit more beef... Filling was turned in to three pies of four portions each, 12 portions in total,,, so seven turn up for dinner today and including Annie that's eight, and a portion put aside for me when I got home that left three extra portions,,, they ate the lot, it was yum, served with mash, broccoli, cabbage and a bit gravey to moisten,,, will deffo be having again...

Tonight Mathew,,,  Mussels, onion, tomato and red wine...

Mussels, onion, tin chopped tomatoes, spoon tomato puree, red wine, two crushed garlic cloves, bay leaf , half teaspoon chilli flakes, basil, parsley, lemon zest and juice, salt and pepper, olive oil and a knob of butter...

Heat oil, soften onion and garlic, once soft add everything else except mussels and butter, if I'd been using fresh basil and parsley I'd have my held that back until the end, simmer for 4 minutes, add mussels cover and steam for 5 to 7 minutes until all open, stirring occasionally, serve with crusty French bread...

Had it umpteen times but without the tomato puree, lemon zest and juice and chilli flakes, just saw a recipe with them in so thought give it a go, so will see what difference that adds or takes away...

Annie's babysitting so once baby's down I cook it...

Well that was different, extra ingredients the tomato puree, lemon zest and juice plus the chilli flakes deffo changed the taste, it normally has a Spanish style taste but was more Thai, yum but not what I was expecting, Annie ain't an over spicy food fan but cleared the dish...

Yip I would make it again but would have something like pak choi and possibly noodles with it and turn it in to an oriental dish...

    Culinary delight thread... - Page 10 Image45

But the tomato puree is deffo going in next Spanish style mussels, thickened sauce up and added to the taste...
