I normally roast gammon joints but Annie wanted it done like that with cabbage so everything else, potatoes and carrot got done in the same pot, only other thing salt and pepper, got to say gammon was yum, nice and tender, can dry up a bit in oven, plus it didn't shrink as it does in the ovan, also it would have been 2h 30m in oven, to boil took 1h 30m...

Went to Chiquito's. Had tapas type food, meatballs in spicy sauce then spicy chicken empanadas with sour cream and whipped honey and feta with pomegranate seeds and wedges of fajita. Finished off with chilli pineapple thins with cinnamon and chilli baked in the oven served with fresh raspberries and a scoop of vanilla ice cream and a sprig of mint which I threw in Mermaid's empty coffee cup! 8/10. Oh, I had a Yucatan Breeze mocktail for starters. You could feel the winds all the way from the Caribbean!

Tonight Mathew big cook, there are eight portions there...
Stuffed peppers, but no rice,,, diced chicken marinated in half jar of red or any other pesto with a crushed garlic clove and salt and pepper stuffed in half a vertically sliced half pepper, topped vertically with thin slices of onion, mushroom cheese and tomatoes, seasoned then drizzled on olive oil and topped with a slice of cheese.
The aubergine cut in to four slices is topped with all of the above but onions, chicken , mushrooms, tomato and cheese finely chopped.
All the end bits of mushrooms, tomatoes and onions get put in dish around peppers, bit garlic salt pepper and oil, all in oven approx 170 for 45 minutes...
Cook tagliatelle to time with finish of oven dishes, remove peppers to one side, add drained tagliatelle to cooking juices, add remaining half of pesto and mix.
One half pepper, half of one of the aubergine slices, and a dollop of tagliatelle is a good serving...
